1 tsp. red pepper flakes

3/4 cup vegetable stock

1/4 cup soy sauce

2 tbsp. cornstarch-water slurry

1 tbsp. light brown sugar

1 tbsp. toasted sesame oil

1 mango (pitted, diced)

1/2 onion (chopped)

1/2 avocado (pitted, peeled, chopped)

1 tbsp. cashews (crushed)

1/ cup strawberries (chopped)

1/2 jalapeno (seeded, diced)

1 tbsp. cilantro (chopped)

Cooking Time - 40 minutes

Serving Size - 2

Instructions:

Preheat the oven to 400 F.

Remove any moisture left in tofu by pressing it with a kitchen towel. Cut it into cubes of even size.

In a bowl, toss the tofu along with cornstarch until well coated on all sides.

Prepare the baking tray by spraying olive oil cooking spray. Then arrange the tofu cubes on it and cook for 35-40 minutes until each side turns crispy-brown. Make sure to turn the cubes in every 10 minutes.

To prepare the sauce, in a sauté pan, heat oil over medium heat. Sauté the garlic, ginger, and red pepper flakes. Gradually, Stir in the brown sugar, soy sauce, cornstarch-water slurry, and vegetable stock.

Keep stirring until the sauce thickens and everything is well combined.

For salsa, take a bowl that can be sealed easily—mix onion, strawberries, avocado, mango, and jalapeno into it. Add the lemon and cilantro along with lemon juice. Toss them all well.

Top with crushed cashews and set aside.

To serve, place the cooked rice at the bottom of the serving plate, add the crispy tofu then, drizzle the spicy sauce over them. Finally, top with salsa and serve.
